So since all my recipe books are in storage and we really don't have our "own" kitchen... I decided to just do a somewhat food related post...

Food Friday- questionaire
Ok.. don't worry I haven't gone nuts... I do know that today is Saturday not Friday, but well, I forgot about food Friday. It happens to the best of us, right? Oh and to apologize in advance I am sure this isn't the lats time I will forget.
So I figured I would let you know some food facts about me today and in turn hope that you will share some with me.
On a scale of 1 to 10 (then being the least picky) how picky of an eater are you: Ok I hate to admit it but I would say 6. I have worked very hard since being married to broaden my horizons. All I know is that I think I have shown some remarkable growth... I used to probably be a 3!
What is a food that you hated ten years ago but love now: SALSA! (I can't believe I was missing out on it!). Also I used to hate Mac and Cheese. I honestly have never had one box of Kraft M&C in my life, and I might keep it that way but I LOOOOOVE homemade mac and cheese now.
What is a food that you loved ten years ago but can do without today: Maybe Fishsticks... I don't know if its that Chris refused to buy them or because I really don't like them any more.
What is one food you could eat every day and never get sick of: pepperoni pizza!
What is one food you will never, ever eat: Its hard to say never, ever... but maybe some types of fish.
What is the meal that you request when its your b-day, or other special occasion: hmmm... I would probably say "thanksgiving" dinner with homemade ice cream and my dad's buttermilk cookies.
What are you food "quirks": I have so many.. thats what probably makes me so picky... so here is a list:
- I have a thing with texture... many of the foods I don't like are because they have weird textures... I hate any "firm" or crunchy lettuce (i.e. Iceberg, etc), I really can't stand shaved coconut, and it bothers me when there is a "firm" component to a casserole or some kind of mixture.
- I have slowly discovered that I do not like peppers
- If you have anything with cheddar cheese and some sort of carb... I will DEVOUR it. Such as quesdillas, nachos, grilled cheese, mac and cheese, cheese toast, etc.
- I am working really hard to build up my burgers. I used to not eat burgers at all like 5 years ago, now I quite love them. I used to hold the cheese on my burgers, but have added that about a year ago. And just recently I have added ketchup to my burger. Now Chris is working really hard to add the lettuce and tomato... someday!
- I have a sweet tooth. My two main culprits are tangy/fruity candy and any thing peanut butter and chocolate combo!
- I don't really drink soda/pop.

Food Friday
Sometimes, I want to post something but I struggle with what to write... so I figure I will have a "theme" to help me out. I thought I would try FOOD FRIDAY. Meaning I will post a food related post every (well maybe not every) Friday. I would most likely predict that it will revolve around a recipe I love or have tried, etc but who knows. At least I have some direction.
After being on vacation and eating out a bunch and the week before that feeling like we had no food in the house (thus creating alot of meals eating out) I wanted to try really hard to have all good home cooked food. Also it has been awhile since I have cooked a bunch, it seems like Chris had done alot lately. Let me tell you how much fun it has been to cook again, especially since nothing has gone terribly wrong yet (knock on wood).
So yesterday I had to make dinner for a family in our ward that just had a baby, so I thought i would cook something new. So the menu was as followed:
- BBQ pulled pork (prepared in the slow cooker) sandwiches
- Corn on the Cob
- Homemade potato chips
- fresh strawberries
- my dad's famous buttermilk cookies
I was inspired to make the homemade potato chips from another blog... here is the link. They turned out great and you don't need to have that fancy "cutter" she talks about in the recipe. And they taste the best right out of the oven!
Also here is the recipe for my Dad's buttermilk cookies! THESE ARE MY FAVORITE! It is actually kinda cute how this recipe came about. One Christmas my dad gifted my mom Sunday dinners, meaning he would cook them. My dad cooked some growing up but mainly just grill items or breakfast foods. Well my dad really got into his Sunday dinners. He found all these new recipes somehow from all these cute old women all over the states. Through it all he became quite the gourmet cook and the Sunday meals were meals to look forward too. Well during this time my dad got this cookie recipe. Ever since, on important occasions my dad would always make them for me, because well lets face it, I'm his little girl and he loves to make me happy!
So here is the recipe:
Cookies-
1/2 c. butter-soften
1 c. sugar
1 egg
1 t. vanilla
2 1/2 c. flour
1/2 t. baking soda
1/2 t. salt
1/2 cup buttermilk
In a mixing bowl cream the butter and sugar until it is fluffy and light.
Beat in egg and vanilla.
Mix in salt and baking soda.
Mix in flour and buttermilk- alternate between the two to make sure it blends better.
Drop rounded tablespoons worth of dough about 2 inches apart on a cookie sheet.
Bake at 375 for 10-12 mins. or until edges are lightly browned.
Remove and put on cooling racks.
Frosting-
3 T. butter -soften
3 1/2 c. powdered sugar
1/4 c. milk
1 t. vanilla
Combine all ingredients in a bowl and beat/whisk until smooth. Frost cooled cookies (I find it easy to put the frosting in a baggie, cut a small bit off of the corner and then pipe it out of the bag)

finally an ice cream scoop that will work!!!
as I was blog browsing yesterday I cam across the coolest thing:
I feel that finally someone has realized my frustration with ice cream scoops that:
1. hurt my "dainty" little wrists to get the ice cream out
2. once the ice cream is the scoop it won't come all out (not at least with out prying from a spoon or my finger)
* AND ITS SQUARE!
This scoop answers both of these problems!
I seriously need on and the usual price is only around 15 dollars.
Maybe it can be a graduation gift to myself.

a site I wish I hadn't found...
Ok so I stumbled upon this site while I was "blog browsing" (which Chris thinks is the strangest thing) and I am wishing I wouldn't have found it... for the sake of my waistline.
This site is dedicated to all CUPCAKE recipes! How fun... and even more importantly, how delicious! I have yet to try any of the recipes, and it may take me awhile to decide on which of the wonderful ones to try first!
